*General understanding of Japanese tea agriculture, manuafacturing and the major Japanese tea types. Registrants should have tasted the major Japanese teas and matcha in previous tea classes or in their tea businesses. Students must be familiar with tea terminology used during tea tastings and evaluations and know the basics of the Japanese Tea Ceremony experience from previous classes or experience.


Course curriculum

  • Class 1 History of tea
    The introduction of tea to Japan during the Heian period in the 8th Century to today’s Japan
  • Class 2 Tea and its macro-environment
    The influence of tea on politics, economics, socio-culture, technology and environment; particularly in the context of Japan
  • Class 3 Types of Japanese tea, cultivars and rare Japanese tea
    The main types of Japanese tea, the development of cultivars for various types of Japanese tea, and rare Japanese tea
  • Class 4 Terroir and tea growing regions
    The essential of”terroir” influence on the characters of tea, and important tea growing regions
  • Class 5 Tea culture - Chado ceremony
    Introduction of Chado to Japan, localisation and schools of Chado
  • Class 6 Tea culture - Sencha-do ceremony
    Introduction of Sencha-do to Japan, localisation and schools of Sencha-do
  • Class 7 Tea Evaluation
    Identification of good and common Japanese tea
